Omelette Muffins

Ingredients

  • 1/2 onion
  • 1/2 cup spinach (chopped)
  • 4 mushrooms
  • 1/4 bell pepper (optional)
  • 8 eggs
  • 1/4 cup almond milk
  • 1 pinch salt, pepper, and chili flakes (optional)
  • 1/4 cup shredded cheese

Instructions

  1. Preheat oven to 350F degrees.
  2. Grease a muffin tray for 6 with coconut oil.
  3. Chop veggies and add equal parts into each muffin spot (about 1/3 of the muffin slot).
  4. In a medium size bowl mix eggs with almond milk, salt, pepper, and chili flakes.
  5. Pour egg mixture over the veggies.
  6. Sprinkle grated cheese on top.
  7. Bake for 30 minutes. Then serve with ketchup, hot sauce, guacamole or toast.
