Coconut Flour Pancakes

Ingredients

  • 4 eggs
  • 1 banana (mashed)
  • 1 teaspoon cinnamon
  • 1 cup almond milk
  • 1 teaspoon vanilla
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Whisk together eggs, banana, cinnamon, milk, and vanilla.
  2. In a separate bowl, stir together coconut flour, baking soda and salt.
  3. Mix wet ingredients with dry ingredients.
  4. Cook pancakes over coconut oil in a pan until golden brown.
  5. Serve with fruit, nuts, honey, or maple syrup
