Quick Healthy Breakfast Recipes to Jumpstart Your Day

Rushing out the door with half a piece of burnt toast every morning sound like a familiar story to you? If you’re anything like me and are always running late, like to sleep in, but still want to enjoy the morning a little more, keep on reading.

We’ve all heard the advice before–prep your lunch, outfit, bag the night before, set your alarm 5 minutes earlier, blah blah blah. Let’s be real. That’s good and all, but those habits can be hard to maintain when you’ve got a lot going on and are too tired come night to even think about tomorrow. But the one thing I actually look forward to in the mornings that I don’t mind putting in a little effort is breakfast! Because who doesn’t look forward to delicious food?

Today I’m sharing 4 of my go-to breakfast recipes that are super easy and fast to make (meaning yes you can still press snooze multiple times) but also really good for you. Contrary to popular belief, healthy eating and a healthy lifestyle doesn’t have to impede on your busy schedule or be incredibly difficult to keep up with. So without further a do, here’s some of my favourite breakfasts to swap through the week:

Omelette Muffins

Make these the night before to have ready for the week or pop these into the oven while you’re getting ready in the morning!

  • Prep Time: 5m
  • Cook Time: 30h
  • Total Time: 35m
  • Serves: 3
  • Yield: 6 muffins

Ingredients

  • 1/2 onion
  • 1/2 cup spinach (chopped)
  • 4 mushrooms
  • 1/4 bell pepper (optional)
  • 8 eggs
  • 1/4 cup almond milk
  • 1 pinch salt, pepper, and chili flakes (optional)
  • 1/4 cup shredded cheese

Instructions

  1. Preheat oven to 350F degrees.
  2. Grease a muffin tray for 6 with coconut oil.
  3. Chop veggies and add equal parts into each muffin spot (about 1/3 of the muffin slot).
  4. In a medium size bowl mix eggs with almond milk, salt, pepper, and chili flakes.
  5. Pour egg mixture over the veggies.
  6. Sprinkle grated cheese on top.
  7. Bake for 30 minutes. Then serve with ketchup, hot sauce, guacamole or toast.

Hot Green Tea Smoothie

Start your day with the healthiest smoothie out there. I can promise you'll feel nothing short of great! I like to drink this smoothie with a side serving of over easy eggs and a handful of raw nuts for a full size breakfast.

Ingredients

  • 1 cup hot green tea
  • 1/4 teaspoon tumeric
  • 1/4 teaspoon powdered or grated ginger
  • 1/2 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 cup spinach
  • 1 apple (optional)

Instructions

  1. Place all ingredients including hot cup of green tea in a blender. Blend until smooth and serve hot.

Fruity Oatmeal Deluxe

My go-to comfort breakfast when I need something filling!

  • Cook Time: 1m
  • Total Time: 5m
  • Serves: 1
  • Yield: 1 bowl

Ingredients

  • 1/2 cup oats
  • 1/3 cup almond milk
  • 1/2 teaspoon vanilla
  • 1 teaspoon chia seeds
  • 1/2 tablespoon cinnamon
  • 1/8 cup walnuts
  • 4 strawberries (chopped)
  • 7 blackberries
  • 5 dried apricots

Instructions

  1. Pour almond milk over oats till covered.
  2. Microwave for 1 1/2 minutes or until oats have absorbed all the liquid
  3. Stir in cinnamon, chia seeds, and vanilla
  4. Top with remaining ingredients and enjoy!

Coconut Flour Pancakes

Make a big batch for the week for breakfast, snacks, AND dessert!

  • Serves: 2

Ingredients

  • 4 eggs
  • 1 banana (mashed)
  • 1 teaspoon cinnamon
  • 1 cup almond milk
  • 1 teaspoon vanilla
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Whisk together eggs, banana, cinnamon, milk, and vanilla.
  2. In a separate bowl, stir together coconut flour, baking soda and salt.
  3. Mix wet ingredients with dry ingredients.
  4. Cook pancakes over coconut oil in a pan until golden brown.
  5. Serve with fruit, nuts, honey, or maple syrup
