I don’t know about you but the cold crisp weather of October makes me hungrier than any other time of the year. I’m constantly craving the warm flavours of apple, cinnamon, and comfort food that I know is not good for me. October is also one of the busiest months for me and I don’t have a lot of time to hide under the cozy covers of my bed like I’d prefer.
That’s why this month I’ve come up with three autumn inspired recipes that are quick and easy to prepare to make my life a little easier. I recently shared a tip here on how meal prepping at the beginning of the weak is a life saver for maximizing your productivity and simplifying your life. This week I’m sharing a breakfast, lunch, and dinner recipe you can make on your meal prep day to have meals ready to go for the rest of the week.

Breakfast: Autumn Overnight Oats
Combining the delicious flavours of seasonal fruit like apples, cranberries, and blackberries, this nutty breakfast is so convenient and comforting on busy fall mornings. It takes literally 5 minutes to prepare the oat base on a Sunday night, and then in the morning, you can grab a container of it to go and top it with different toppings every morning to change it up.
Lunch: Autumn Power Bowl
Instead of grabbing that third cup of coffee to get you through a mid afternoon slump, try bringing an energizing power bowl to work or school to give you that boost. I love power bowls because they’re so versatile and customizable. For autumn, I’m using seasonal ingredients like raw pumpkin seeds, brussels sprouts, butternut squash and cranberries. This power bowl is packed with fresh nutrients and is easy to both prepare and change up throughout the week.
Dinner: Comfort Chili
Comfort food doesn’t always have to be bad for you. This is my go-to healthy comfort chili recipe packed with protein and delicious fall flavour. I love coming home to ready made chili I can just pop in the microwave and stuff my face with.
